Fried Rice

2 cups whole grain rice

4 cups water

4 slices bacon

1 medium onion

4-6 ish oz. fresh mushrooms

1 cup green peas, fresh or frozen

4 eggs

Soy sauce or Braggs liquid aminos

Put water and rice in large pot, bring to a boil, reduce to low and cook approximately 45 minutes or till water is gone and rice is slightly sticky, but not super moist. Cook bacon, set aside to cool. Finely chop onions, saute in a little olive oil or the bacon grease over med-high heat for about 4-5 minutes, add sliced mushrooms, cook till tender and onions are translucent, add peas and cooked rice, crumble bacon and add. Pour on sauce or aminos to taste ( I use about 1/2 to 3/4 cup. ) Beat the eggs and add to the rest of the ingredients in the pan, stirring often till cooked thoroughly. Enjoy! This also freezes well for up to two months, and is good served with the tortilla wraps.
